Asphodel honey

Almost white, creamy, rare. Asphodel flowers for just a few weeks in Villasimius — and the honey it gives can't be found anywhere else.

Asphodel flowers in spring for a few weeks, on the uncultivated pastures and along the coast at Villasimius. It isn't cultivated and it can't be planned — it arrives, it flowers, and the bees know what to do. Then it is gone. That is why asphodel honey is rare: it depends on a flower nobody can control.

Almost white, pearly colour, with a creamy texture and a fine crystallisation you recognise immediately. It is delicate and floral, with a clean sweetness and no heavy notes. The kind of honey you notice for what it doesn't have: nothing loud, nothing that covers anything else.

Hard to find outside Sardinia. Easy to finish sooner than you expect.
