Chestnut honey has character. Dark amber colour, a lingering aroma, a slightly bitter finish that stays on the palate — not as a flaw, but as a signature. It is the kind of honey you remember after tasting it, not the kind you put in the cupboard and forget.

The bees forage among the wild chestnut woods (Castanea sativa) around Villasimius, in the same land where our vines grow. Far from intensive agriculture, in a place that gives what it gives — with no corrections.

We pair it with Brennas — our Cannonau — because they share the same build: assertive, full of personality, not for anyone looking for something neutral. On aged cheese, with pane carasau or instead of sugar in tea, it changes everything.
