Every jar is different. The season changes, the flowers change, the taste changes. An extract of Sardinia at that precise moment.

Anyone who says wildflower honey is second-rate hasn't tasted the right one yet.

Every jar is different from the last. The season changes, the pasture changes, the flowers the bees found in the Mediterranean scrub of Villasimius change. No Sardinian wildflower honey is the same as the one before — and that is exactly the point. It isn't a generic honey: it is an extract of Sardinia at that precise time of year.

Colour and taste vary with the season: sometimes pale and floral, sometimes darker and more intense. Delicate, balanced, immediate. It wins over people who don't like strongly characterised honeys and surprises those who thought they already knew it.
