C'Alma comes from an ancient gesture: leaving the skins in contact with the must, the way it was done before anyone invented white wine. The result is a Sardinian orange wine that resembles nothing else — amber, structured, with a complexity that reveals itself slowly in the glass. Made from Vermentino and Nuragus grapes from Villasimius, partly organic. No correctives, no shortcuts.

How it is made

Maceration on the skins lasts 20–25 days in steel vats: that is where the wine takes on its colour, its structure and an important part of its character. Then 5–6 months of ageing in oak barrels, which add depth without covering the territory. No chemical additives, no artificial preservatives.

On the nose and palate

Deep amber colour with golden highlights. The nose is generous: ripe fruit, dried apricot, spiced notes with a touch of smoke. On the palate it is savoury and exuberant, with a structure whose density comes as a surprise. The long finish brings vanilla, caramel and a thread of cardamom — warm spices that speak of months spent in wood. A wine to drink slowly, in good company.

What to drink it with

It is a versatile wine: its structure lets it stand up to blue and aged cheeses, lamb with myrtle and spiced Mediterranean cooking, while its savouriness makes it perfect with bottarga, grilled meaty fish, shellfish and oysters. It also works as a wine for quiet contemplation after dinner, when all you want is the glass.

Tasting notes:
Soft and fresh at the same time. Sweetness and acidity balance each other without either prevailing — the hallmark of a balanced wine with great drinkability. The finish is fruity, long, and pleasant: fresh fruit returns without becoming tiresome. Perfect as an aperitif. Equally at home with delicate dishes — tartare, or light, spiced vegetable-based cuisine.

    Cos'è il C'Alma?
    C'Alma è un orange wine da uve Vermentino e Nuragus di Villasimius. Le bucce restano a contatto con il mosto per 20-25 giorni in acciaio inox, poi il vino affina 5-6 mesi in rovere. Il risultato è un vino ambrato, con struttura e tannini leggeri — diverso da un bianco, diverso da un rosso.
    Cos'è un orange wine?
    Si fa come un rosso, ma con uve bianche. Le bucce restano a contatto con il mosto durante la fermentazione — in questo caso per 20-25 giorni. Le bucce cedono colore, tannini e complessità aromatica. Il risultato è un vino ambrato, più strutturato di un bianco classico.
    Con quali piatti si abbina il C'Alma?
    La struttura gli permette di reggere piatti che metterebbero in difficoltà un bianco classico: formaggi erborinati e stagionati, cucina speziata del Mediterraneo, bottarga e pesce strutturato, agnello al mirto. Funziona anche come aperitivo importante o vino da meditazione dopo cena.
    A che temperatura si serve il C'Alma?
    Tra i 12 e i 14°C — più freddo di un rosso, meno freddo di un bianco. Questa via di mezzo non è un capriccio: a temperatura troppo bassa i tannini si chiudono, a temperatura troppo alta l'acidità si perde.
    Qual è la differenza tra C'Alma e Entu?
    Entu è un Vermentino bianco classico — fresco, sapido, immediato. C'Alma parte dallo stesso vitigno ma viene vinificato con macerazione sulle bucce: più struttura, più complessità, meno freschezza immediata. Sono due modi diversi di leggere la stessa uva.
