An ancestral, unfiltered wine that still carries the moment of the harvest inside it. Zankitai is made from organic grapes grown in Villasimius, matures with maceration on the skins and re-ferments in the bottle by the ancestral method — no additions, no corrections, no filtration.

How it is made
Pétillant Naturel — Pet Nat in the language of natural wine — is the oldest sparkling method there is. The second fermentation happens in the bottle, with indigenous yeasts, before fermentation is complete. The result is a delicate, creamy, living bubble.

On the nose and palate
Amber colour with orange highlights. Fine, persistent bubbles that rise slowly. Aromas of ripe citrus, apricot and candied orange peel with a thread of Mediterranean scrub. On the palate it is dry and fresh, with a savoury finish in keeping with the sea you can see from the rows.

What to drink it with
Seafood starters, bottarga, fresh sheep's cheeses, spiced international cooking. Surprising on its own, too, as an aperitif.

Storage
Upright, in a cool, dark place. Chill to 10–12 °C before opening, and open with care. Once opened, keep refrigerated and drink within 24–48 hours.

On the palate, it is fresh, savory, and delicately effervescent: a rich aromatic profile that maintains lightness and drinkability.
